Well, in my opinion, it depends on what you have, and what you are looking for. If the car is a concourse restoration, the carbs would be a must. If the drive train is the only numbers correct piece, meaning you have after market wheels, custom paint, interior, etc. I think it would be a waste of dough. However, nothing states "cool factor" like having a set of those laying around just in case ya wanna bolt em on, of course, unless finances do not permit.
